Patricia Neely-Dorsey’s fascinating book of poetry, Reflections of a Mississippi Magnolia, is a true celebration of the south and things southern. Using childhood memories, personal thoughts  and dreams, the author offers a positive glimpse into the southern way of life.

The author states, “There are so many negative connotations associated with Mississippi and the south in general. I want to to show a flip side of the coin. There is much to love about this much maligned and misunderstood part of our country.”

It’s a wonderful life!! I am very proud, thankful and grateful to be a Southerner. I hope that during this week you might have gained some insight into just why I make this claim. I hope that I have opened a window into a different or deeper understanding of this much misunderstood and maligned region and see just why I’m always shouting “I LOVE THE SOUTH.”

REFLECTIONS OF A MISSISSIPPI MAGNOLIA

When I look back on my life,

I think how wonderful it has been;

To have had the most wonderful parents of all,

And a host of wonderful friends.

My high school days were blissful,

And my college days so fun,

Fun memories are one thing for sure,

That I have by the ton.

I’m so glad that I grew up,

On Mississippi sod,

My t-shirt reads; American by birth,

And Southern by the grace of God,”

My life has been so wonderful,

I wouldn’t change one condition;

As one friend of mine always says,

I should have paid admission.

Recommended Southern Dish of the Day

PEACH COBBLER

Ingredients

Filling

  • 5 cups sliced peeled peaches (about 3 lbs)
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter

Batter

  • 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1 egg slightly beaten

Instructions (Makes 9 servings)

Make filling.

  • In medium bowl combine peaches, sugar, flour, lemon juice, vanilla
  • and almond extracts, cinnamon, salt and water.
  • Turn into 8 by 8-2 inch baking dish.
  • Dot with 2 tablespoons of butter.
  • Preheat oven to 375F

Make batter.

  • In medium bowl, combine all batter ingredients and beat with a wooden spoon until smooth. Drop in 9 portions over filling, spacing evenly.
  • (Batter will spread during baking.)
  • Bake 35 to 40 minutes or until peaches are tender and crust is golden.
